Roasted Rainbow Carrots!

Yes! Rainbow carrots! I’ve seen these a few times on TV and jumped at the chance to buy them when I saw them in the store.

Roasting veggies is sick an easy way to prepare the food you love. I don’t like steamed brussel sprouts, but will give my left arm for some good, roasted brussel sprouts. Weird, huh?

Recipe below!

Toss rainbow carrots in 1 tablespoon olive oil & 1/2 teaspoon kosher salt

Arrange in a single layer on a baking sheet;

Roast at 450 degrees F, turning once,

for about 15 minutes

Sprinkle with salt and chopped chives.
