With the change of the weather, it’s always great to have a nice, warm bowl of chili. Since the kids are back in school, I’ve been using my Instant Pot more than ever. I found a great chili recipe online and added to it to make it perfect!
1 1/2 pounds lean ground beef
3 slices of bacon
1 onion, chopped
1 small green bell pepper, chopped
2 garlic cloves, minced
1 (16-ounce) can black beans, rinsed and drained
1 (16-ounce) can pinto beans, rinsed and drained
1 (14-1/2-ounce) cans diced tomatoes
1 (14-1/2-ounce) cans tomato sauce
2 to 3 tablespoons chili powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground cumin
Sauté bacon until crispy. Crumble bacon and place to the side. Brown ground beef in bacon drippings. Drain. Place all ingredients in Instant Pot and set to Chili.
Total cook time: 30 mins
Garnish with sour cream, shredded cheese, and serve with rice or cornbread.
