Instant Pot Chinese Curry Chicken

Quick and easy curry chicken video


  • 1 pound chicken (which ever part you desire)
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 3 tablespoons canola oil
  • 1 tablespoon curry powder
  • 2 carrots peeled and cut in 1/4 inch slices
  • 1 green bell pepper cut into slices
  • 1/2 yellow onion sliced
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar


  1. Add oil to Instant Pot and turn on saute.
  2. Add curry powder to warmed oil and stir gently
  3. Combine the soy sauce and cornstarch
  4. Add veggies to mixture and saute until slightly tender
  5. Remove veggies
  6. Add in the chicken (note: I usually marinate my chicken overnight in curry and sliced onions), sesame oil and sugar
  7. Put Instant Pot on pressure cook and set for 15 minutes
  8. Once cooked, separate chicken from bone or cut breasts/thighs into pieces
  9. Serve with rice (I use coconut milk and water as a base to cook my rice)
