Ingredients

  • 1 each spaghetti squash (3 pound); halved and seeded
  • 1 cup vegetable broth
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp white pepper
  • 1/4 cup Parmesan cheese freshly grated
  • 1/4 cup mozzarella cheese shredded
  • 2 cup spaghetti or marinara sauce

Instructions

  • Combine halved spaghetti squash, vegetable broth, seasonings in a multi-functional pressure cooker (such as Instant Pot(R)). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 7 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
  • Shred spaghetti squash and mix in Parmesan cheese.
  • Heat oven to 350 degrees and grease a baking sheet
  • Drizzle marinara sauce on top of squash.
  • Sprinkle mozarella cheese on top of shredded squash.
  • Bake for 10 minutes or until cheese is melted.
